Every loaf is shaped by hand, proved overnight, and baked at dawn. No shortcuts, no preservatives, just flour, water, salt, and time.
Goldkorn started in a converted garage with a single wood-fired oven. Six years later we supply three farmers markets and run a storefront on Flour Mill Lane. Our starters are descendants of a culture brought from the Black Forest in 1987. Every recipe reflects that heritage — slow fermentation, stone-milled grains, and honest ingredients.
Not currently. Our long fermentation reduces gluten content, but we cannot guarantee a gluten-free environment.

Not yet. We are exploring shelf-stable options for 2026 but today everything is baked and sold locally.
6:00 AM - 2:00 PM. Bread is out of the oven by 6:30. Pastries sell out by 10 on most days.
7:00 AM - 1:00 PM. Saturday is market day — find us at the PSU Farmers Market too.
